Heart Pressed Release Fun

Hello Readers,
I am SO excited about the release of Heart Pressed by Melissa Wardwell. I love Beth because I dream of being her. I would love to have a food truck, travel around islands creating yummy food, and watching sparks fly with islanders.
Since I can’t….Let me tell you about cookies.
Cookies are my go to dessert. I love them. I love experimenting with recipes. I love to see my families faces light up when I take out butter because they know what is coming. I joke saying I can make cookies in my sleep.
Why?
Because when I was in high school and my first year of college, I worked at t cookie store – Mrs. B’s Cookies. 20+ hours a week – mixing, scooping, baking. I learned a lot.
Ever since then, cookies have been a serous business in my house.

This was our first day of baking this past Christmas. Since covid was going on, it was smaller than in the past but still quit the operation.
Reader, I want to share with you a couple of my trade secrets!
First, when you make any basic chip cookie beat your softened butter until it is nice a fluffy. Then add your white sugar, beat until fluffy. Then your brown, beat again until fluffy. Add your eggs and vanilla and mix in slowly. Lastly, add your dry ingredients before your chips and nuts.
Second, refrigerate your cookie dough at least a couple of hours before baking. Use a an ice cream scoop to get them all even.
Third, if you haven’t tried browned butter cookies….They are a must! Adding instant coffee makes them come alive.
Here is my recipe for you to give them a try:

Brown Butter Chocolate Chip Cookies

2 sticks butter
3/4 cups white sugar
3/4 cups brown sugar
2 eggs
1 tsp Vanilla
2 1/4 cups flour
1 tsp baking soda
1 tsp salt
2 tbsp instant coffee
One bag chocolate chips
Take one stick of butter and melt it on the stove over med-low heat. Let it continue to cook as you stir. After about 5 minutes you will se the butter get really brown with flakes in it. Pour into a dish and let cool. Note – it can burn quick so keep a constant stir.
Once the butter has cooled, add it to the bowl with the other stick of softened butter. Beat until nice and fluffy.
Add white sugar, then beat until nice and fluffy. Add brown sugar, then beat until nice and fluffy.
Add in eggs and vanilla. Beat on low until mixed in.
Combing flour, baking soda, salt, and coffee in a bowl. Slowly add the flour mixture into the bowl with the rest of the ingredients mixing on low until all combined.
Add chocolate chips and combine.
Refrigerate at least 2 hours before baking. Bake at 350 degrees about 10 – 12 minutes.
